Our barrel-aging beers focus on what happens during that long maturation period in the wood. A combination of oxidation through the wood, absorption of what was previously in the barrel—Bourbon, Scotch, wine, etc.—as well as the extractives from the barrel’s wood. All of these factors are intriguing and exciting, but there’s an element of chance. When everything goes to plan, when the variables unite a barrel-aged beer is magical.

#1,000 BOURBON BARREL-AGED IMPERIAL COFFEE STOUT
It has extra sweet cinnamon and locally roasted coffee beans added. This Imperial stout has a robust flavor profile with a hint of bourbon and a touch of sweet spice.

8ight Anniversary Bourbon Barrel-Aged Imperial Stout
We started with the best and most unique barrels the world of bourbon had to offer. This year after several tastings of individual barrels–some dating back to our first batches–we created a blend for this year. The 2023 vintage features freshly emptied bourbon barrels from Heaven Hill, Henry McKenna, and Widow Jane blended with several Anniversary Stouts from the past.
