Our barrel-aging beers focus on what happens during that long maturation period in the wood. A combination of oxidation through the wood, absorption of what was previously in the barrel—Bourbon, Scotch, wine, etc.—as well as the extractives from the barrel’s wood. All of these factors are intriguing and exciting, but there’s an element of chance. When everything goes to plan, when the variables unite a barrel-aged beer is magical.

  • Barleywine Aged in Bulleit Bourbon Barrels (2025)

    Big, bold, and beautifully aged. This rich Barleywine picks up notes of vanilla, oak, and caramel from Bulleit Bourbon barrels, layering over deep malt sweetness and a touch of hop bite. A smooth sipper with serious character.

  • Doc's Old-Fashioned 25

    Brandy

    Imperial red ale aged in brandy barrels and then doctored with spices, orange peel, and cherries. This is our take on a Brandy Old-Fashioned, a true Wisconsin classic.

    Bourbon

    Our more traditional Old-Fashioned is bourbon barrel-aged and tends to have more notes of vanilla and oak.
